La Fabbrica Della Farina commercial hospitality fitout by Total Fitouts Sunshine Coast South transformed a former Sumo Salad into a vibrant Italian focaccia sandwich and pizza takeaway. Located in the busy Sunshine Coast Plaza, the space is owned by Danny and Daniela, who wanted to bring a rustic, authentic yet inviting feel to their new venture.

The commercial design is centered around warm timber features and bold red tiles, creating a rustic Italian atmosphere that reflects the heart of their menu. The commercial hospitality fitout involved ensuring the entire space adhered to health and safety food standards and building codes, including a complete fitout of both the front-of-house and back-of-house areas. The main service area includes pizza display cabinets, a hot food display, and a side section featuring a deli refrigerator for slicing meats. The back-of-house was equipped with prep sinks, dishwashers, and a new exhaust hood.

Heath Nicholson, Director at Total Fitouts Sunshine Coast South said, “One of the unique design elements within the commercial hospitality fitout is the deli refrigerator and pizza displays, which take full advantage of the shop’s corner location by creating two distinct display areas. Customers can enjoy visual access to both the pizza section and the deli/meat area, enhancing the space’s functionality and appeal.”

Designed by Mark Barnett Projects, the commercial fitout presented some challenges, such as installing a heavy pizza oven, which required the assistance of five people through a shopping centre. The team also had to navigate working in a small space and adjusting to the regulations and legislation specific to Sunshine Coast Plaza. Additionally, there were compliance requirements for the type of stone used on the serving bench top within the commercial hospitality fitout.

Despite these challenges, the end result of the commercial hospitality fitout is a charming and efficient space that captures the essence of Italian cuisine and creates a welcoming environment for customers.
